About that cover crop: After the sweet potatoes are harvested, they plant another crop to prevent soil erosion. Come spring, they turn over the crop and use it as fertilizer. Bam.
FUN FACT: Regenerative practices mean more microorganisms are joining the symbiotic sweet potato party, and all this wildlife makes for looser, healthier soil.
